Coconut White Chocolate Covered Strawberries

  • 10 strawberries washed & dried
  • 1/2 cup white chocolate chips
  • 1 tsp coconut oil
  • 2 tsp canned coconut milk or cream
  • 1/2 cup coconut flakes unsweetened


  • Set up a work station on a counter by the stove: tear a piece of parchment paper and line a rack over the top. Add the coconut flakes to a small shallow bowl and set aside.
  • Heat a small saucepan over low heat until warm. Stir in the white chocolate chips and coconut oil until it starts to melt. Once the mixture starts to clump together, remove from heat and stir in the coconut milk. Whisk until smooth and no clumps remain.
  • Immerse each strawberry in to the chocolate mixture, then in to the bowl with the coconut flakes. Place on the rack to cool. Repeat until no strawberries remain. Enjoy!
