Summer Peach Mint Cocktail

After posting my Carrot + Garden Mint Margaritas this Spring, a reader suggested I share a “less-sugary” version of a mojito. Since mojitos are always a drink of choice in the Summer, I didn’t think twice about it. Although- I didn’t necessarily want it to be just another cocktail recipe floating around the internet. Instead, I wanted it to highlight all the bursting flavors of August. I started visualizing what I would actually want in a Summer cocktail. Ripe peaches, lemon, thyme, and mint are the backbones in which pull this drink together- and do so just right.

I’ve recently also been talking about thrift shopping lately. I scored this gorgeous (slightly beat up) turntable from a yard sale a few weeks back. I’ve been styling it on my kitchen counter to hold things like evoo, salt, pepper, a canister, etc. But it’s also perfect for serving things like cocktails, desserts, and mini apps for guests.
I’m a strong believer that everything in my home has to have meaning. Luckily, my husband and I are both (semi) minimalists. I don’t mean nothing-on-the-walls type of minimalists, but rather, we are very careful and thoughtful to everything we decide to put in our home. (Most likely why it’s taking so long to furnish it..) I don’t think this is a bad objective, however. It simply means, if we are going to see something every day, or use every day, it needs to be just right.


Around the same time I brought home the turntable, my grandma reached out asking if I would like these crystal glasses. She explained to me that they were her aunt’s and she no longer had use for them. “OF COURSE.. I mean yes, I would love to have them..” I told her. The set came with a variety of wine glasses, goblets, and beautiful coupe glasses (very enthusiastic about those). I feel an abundance amount of comfort knowing that pieces like these live in my home, and it’s something I can pass on to my own children.
Whether you have fancy glasses or not- this Summer Peach Mint Cocktail is elegant enough. Without the sugary syrup, I created it with a blend of honey, thyme, lemon, and bursting peaches. Summer Peach Mint Cocktail
Ingredients
For the Peach Puree
- 1 ripe peach roughly diced
- 1/2 cup water
- 1 tbsp honey
- 4-5 thyme sprigs
- 1/2 lemon juiced
For the Cocktail
- 1 shot vodka
- 1/4 lemon juiced
- 4-5 mint leaves
- 2-3 shots peach puree
- Splash of Topo Chico (or your favorite sparkling water)
Instructions
For the Peach Puree
- Combine the peach and water in a high powered blender and blend until smooth.
- Place a small saucepan over medium-low heat and add the peach mixture, honey, thyme, and lemon juice.
- Bring to a gentle simmer, and cook until slightly reduced (about 5 minutes).
- Remove from heat. Pour in to a bowl, and let cool for 15-20 minutes.
Assemble the Cocktail
- Add the mint leaves and juice of 1/4 lemon to a cocktail shaker. Gently muddle to bring out the flavor of the mint.
- Fill the cocktail shaker with ice, pour in the vodka, and 2 shots (or 3 if you like it sweeter) of the peach puree.
- Shake well. Pour in to a glass and top with a splash of Topo Chico (and more herbs, if desired).
- Enjoy!
